The 2002 Dom Pérignon is just beginning to enter the second stage of its life where the primary flavors are receding, but at the same time the more mature notes have not yet developed. Today, the 2002 stands out for its texture, balance and overall harmony. Hints of apricot, white flowers, honey and spices flesh out on the resonant, creamy finish.

Extraordinarily firm, confident, intense nose. Definitely the savoury side of Dom. Nothing remotely sweet or fat - though it's as intense as a Montrachet. Wonderful quality of mousse - surely slightly less bubbly than it has been? More like a Montrachet with a bit of carbon dioxide laced into it than a typical champagne. Broad and long with a hint of orange peel. Great persistence. This already delivers but has such backbone and great acidity and light grip (only noticeable at the very end of the tasting experience) that it surely has a long life ahead of it. Really reaches every hidden cell of the palate. A very assured performance. LVMH at its very best?

This is the haute couture of the Champagne world—all about elegance, texture and attention to detail. Drink now through 2027.

Upon opening it took a few minutes to get through a funkiness but after that it was nothing but smoothness. This was very mellow but complex, the acidity wasn't too intense. Nose had nice bouquet of flowers and palate was buttery. This is singing right now and had potential to get a little better, probably another couple of points better.

Classic! Very complex, couldn't put it down. Starting to sing with notes of dried fruit, nuts, brioche, etc etc. Doms get quite oxidative when they are older and this is showing that perfect middle ground. Open but with lots of acidity and mousse. Highly recommended for that special celebration.

Texas Brisket for good friends - Dom Perignon, Craggy Range (Ponsonby, Auckland, New Zealand): As fine as Champagne gets - in my experience. This is the essence of the Moet style and is all about balance, equilibrium and intensity. This is like a fine Swiss watch in manufacture and boasts brilliant complexity. Showing some tertiary character for the first time, in my experience. This has always been a knock-out and will continue to be one for the next few decades.
