Description

The domain of Cayron
Located at the foot of the Dentelles de Montmirail, Domaine du Cayron has existed since 1840 and has been managed by the FARAUD family for four generations.

The fifth generation is represented by the three FARAUD sisters. Delphine, Cendrine and Roseline bring their knowledge and all their know-how in order to produce high quality wines in the respect of the purest tradition under the attentive eye of their father Michel FARAUD.

Terroir
The Estate is composed of 17 ha on marl and clay soils, sandy and stony.

Our plots (about twenty) are located throughout the Gigondas territory; Dentelles de Montmirail at the Cayron Pass located 400 m above sea level to the scrubland through the Bois de Menge with vineyards of an average age of forty years with a thrust of seventy years for a party between them.
Gigondas
Grapes: 78% Grenache, 14% Syrah, 6% Cinsault, 2% Mourvèdre.
Soil type: Clay-limestone, sandy, stony to very stony.
Yield: 30 hl / ha
Harvest: 100% manual without destemming with severe sorting at the plot.
Vinification: Traditional. Crumble dumpster. No scratching No yeast, vatting 21 days with pumping over daily.
Breeding: 100% Old Oak Lightning for 12 months.
Aging: 8 to 10 years (and more for some vintages).
Appearance: Intense purple color with bright reflections.
Aromas:Nose of red fruits (cherry) and black (blackcurrant), garrigue, spices (pepper), basil, with a mineral note and a lot of freshness.
Taste: Greedy mouth, powerful and full with fine and silky tannins. Elegant and harmonious wine with a beautiful length at the end of the mouth.
