Vinification :

A blending of plots, all from the Hamlet of Pouilly on the village of Solutré Pouilly.
The grapes are hand-harvested when fully ripe and pressed immediately by pneumatic press.The juice then go through static settling. Only clear juices are vinified for 70% in stainless steel tanks and 30% in 1 to 3 years old barrels.
The wine is matured on the lees and regularly stirred.
It is then fined and filtered before bottling.
Tasting :

The chailloux's from flint soil, give fresh, mineral wines with blossom and hazelnut aromas, rich complex and round in mouth.
Best served at a temperature of 12°, with shellfish, grilles fish White meats and goat's cheeses.
