Description

This is a classic wines from the Valais canton in Switzerland, superb with game/red meat

A deep dark ruby red, tinged with purple, the nose is powerful, dominated by spice and black cherry fruit, with blueberry, clove, and vanilla notes. On the palate it is full-bodied, with plenty of dark crunchy fruit, spice, all balanced by good acidity and smooth silky tannins.

This is top Cornalin from Giroud from a single vineyard - big, dark, and powerful. The grapes come from Ardon, one of the top sites for Cornalin. The winemaking process includes a long slow maceration of some 4 weeks, to get maximum extraction of tannins and pigment to ensure structure. The wine is then aged in large oak barrels for some 18 months, during which time it undergoes the second (malolactic) fermentation, which brings softness and smoothness.
