Ridgeview Blanc de Noirs 2014 (Pinot Noir) - 25th Anniversary edition
TASTING NOTES:
View: Color clear deep gold with a fine and persistent bubble stream.
Nose: black cherry and licorice that bind apricot fruit and lightly toasted characters.
Mouth: complex flavor with hints of spices which provide a rounded texture and finish that is durable and beautifully balanced, full-bodied with a harmonious and very long finish.
APPELLATION: Sussex (England, UK).
VINEYARD: Ridgeview.
GRAPES: Pinot Noir (68%) and Pinot Meunier (32%).
PREPARATION: The cool climate allows the grapes retain their high levels of natural acidity when fully ripe. It gets very careful collection and transportation of the grapes. The process has a minimal intervention is invested in the most modern machinery and specialized for manual collection then go to the cellar to be pressed gently to extract the maximum flavor to finally move to bottling.
WINE PAIRING: It is recommended to taste with game birds, red meat, white and mushrooms.
RECOMMENDED SERVING TEMPERATURE: 10 - 12 ° C
