Description

The number of vigneronnes or women winegrowers in the Jura is small, but they are all strong characters who have built up great respect for their wines. Managing her 4.5ha of vineyards from vine to sales as many do here.

The Savagnin grape produces a vin jaune (yellow wine) at Château-Chalon, which is aged for 6 years on ullage in barrel. It undergoes a process similar to sherry, whereby a film of yeast (une voile) covers the surface, thereby preventing oxidation but allowing evaporation and the subsequent concentration of the wine. The result is a sherry-like wine with a delicate, nutty richness. It is bottled in the traditional bottle called clavelin that is of a peculiar shape and with a capacity of 62 cl, which is accounted for by a local legend. 62cl is the amount left of a litre of wine after aging in cask. Whilst drinking very well now it could be kept if you have the right cellar conditions
