Description

One bottle of Chablis Premier Cru, Fourchaume 2006 , Dom Maurice Lecestre - This Premier Cru Chablis shows a bright lemon-yellow colour and has an attractive nose of floral and yellow apple flavours. The palate is crisp and clean but with some weight and concentration that sets it up well for food pairing. Flavours of ripe apple, some honey and nuts are met by minerality and refreshing length. Delicious.

One bottle of Chablis 1er Cru Vaillon Christian Moreau 2007, Cuvee Guy Moreau from the top line Domaine Christian Moreau. Wine Spectator - 92 points "There's a savoury seashore edge to this apple-and lemon-tinged white, which is bracing and tangy, with a hint of tannins shoring up the finish, in addition to the keep acidity. Excellent length." The Domaine Christian Moreau Pere et Fils 1er Cru Vaillon "Cuvee Guy Moreau" is sourced from select vines planted in 1933, from multiple plots within the Moreau holdings. 60% of the overall Guy Moreau blend is aged entirely in stainless steel, with the remaining 40% seeing oak for a total of 6 months. The wine is then blended and aged for additional time in stainless steel prior to bottling. Seeing more oak aging than the other Vaillon cuvée the Cuvée Guy Moreau is typically ripe on the palate, rich and complex while retaining a finish of mineral and clean acidity. Vintage Notes "(from vines planted in 1933). A very subtle touch of wood frames an otherwise similar nose though there is more mid-palate concentration and dry extract to the textured and seductive flavors that culminate in a pure, refined and detailed finish brimming with ample Chablis character and impeccable balance. It may simply be the additional extract completely buffers the acidity but at present anyway, this seems more forward." 90-92 pts. –Allen Meadows, Burghound, Oct. 2008

One bottle of Domaine Jean-Claude Bessin, Chablis Grand Cru, Valmur, 2007. WS 90. "Valmur is widely considered to be one of the best Grand Cru climats, alongside the neighboring Grand Cru climats Les Clos and Vaudesir. This is due in part to its aging ability, but also because the racy-yet-elegant quality of its wines is considered almost quintessentially Chablis."
