Fabulous, think fine old tawny port or even maderia. Banyuls and Banyuls Grand Cru can only be produced in the communes of Collioure, Port-Vendres, Banyuls and Cerberus, representing 1,200 hectares, producing 28 500 hl. Mainly from the Grenache grape varieties (black and gray) to which a small amount of old Carignan is added to produce its structure, Banyuls are vinified by maceration. The Banyuls Grand Cru are distinguished by their proportion of Grenache (75% minimum) and the duration of their maturation (30 months minimum in wood).
