Description

ORGANOLEPTIC EXAM: pink onion skin with white froth, very fine and persistent perlage. Bouquet of flowers (wild rose) and small red berries (raspberry). Fine and complex aroma, dry and gentle dry flavor.

VINIFICATION: very slow and soft pressing of whole bunches. It owes its delicate and constant color to the maturation of the submerged cap peels. The fermentation takes place in stainless steel tanks at a controlled temperature (17-19C) with indigenous yeasts to keep intact the flavor and aromas of Franciacorta.

MATURATION: in the months of March and April, the passage in the bottle is made for frothing.

AGING: the bottles are stacked in refining rooms at controlled temperatures (12-14C) for at least 37 months. After this period the Franciacorta Rosè Brut takes on its characteristics of fragrance and flavor with a very fine perlage. Then we move on to the final phase of remuage and degorgement.
