His roots go back to the mid-19th century, when Cavalier Francesco Borgogno began producing his own wine, selling it in his wife's small tavern in Barolo.
This winery is one of the most representative of Cannubi, in the heart of Barolo. It is a house with more than 120 years of history and today it is the fifth generation who is in charge of this centennial project.
In addition to owning 3 hectares at the top of Cannubi, the Borgogno family passionately cultivates their own vineyards and other rented vineyards for a total amount of approximately 7 hectares located mainly in the counties of Barolo, Novello and Diano d'Alba. All the work, from the pruning to the thinning and the selection of the grapes before the harvest, are personally managed by the Family, in order to obtain healthy and genuine grapes, and to produce a wine that authentically reflects the land from which it comes. comes.
For this wine, the 100% nebbiolo grapes are obtained from 3 hectares of vineyards that are more than 30 years old. Once in the cellar, maceration is carried out for 30-40 days in wooden barrels with frequent pumping over. The wine is then transferred to steel tanks for malolactic fermentation at a controlled temperature of 18ºC. It is aged in 2,500-5,000 liter barrels, where it remains for 30 months. To finish, it is left in the bottle for at least 6 more months.
