I received this email today from the Rothschild estate with more information on this bottle; “Further to your question, here are some information about Mouton Eau de Vie de Vin. After picking, the grapes are vinified in the Château Mouton Rothschild winery. One batch of wine is selected for transformation into grape brandy, eau de vie de vins. The wine, which has an alcoholic strength of approximately 12°, is sent to the distillery. The first distillation produces a distillate, called brouillis, with an alcohol content of approximately 20%. A second distillation is carried out, in the course of which the initial and final distillates (head and tail) are eliminated. Only the middle run, or heart, is kept and subsequently matured in oak casks. While it matures, the spirit is diluted so as to reduce its alcohol content to around 42°. Different batches are then blended. Eau de vie de vin is chilled and filtered before bottling so as to ensure maximum clarity and brilliance. The Eau de Vie d’Aquitaine de Mouton Rothschild was renamed Eau de Vie de Vin de Mouton Rothschild for the release of the 2014 blending, in order to reflect more accurately the elaboration process. Indeed, after picking of the grapes and vinification in the Château Mouton Rothschild winery, one batch of wine is selected for transformation into grape brandy : it is more precise to call it Eau de Vie de “Vin”, made with Wine, than “Marc”.
