Description

When Bin 707s eminent architect, the great Max Schubert returned from Bordeaux and began his quest to create the Australian Premier Grand Cru, his mind was on set firmly on Cabernet Sauvignon. It was not until 1964 however, that Schubert could be satisfied he'd got the formula right. Designed to be a national flagship Cabernet of the highest order, Bin 707 was not made from 1970 to 1975, nor in 1981, 1995, 2000 or 2003. Bin 707 holds a secure place within the pantheon of profound Australian icon wines.
Dark cherry red in colour. Intensely scented, the rich bouquet offers coffee Cabernet aromas with blackcurrant and mulberry overtones, lifted by vanillin American oak and barrel ferment characters which add a smoke complexity. This magnificent full bodied wine shows concentrated Cabernet fruit and complementary oak characters in perfect harmony. The palate has layers of intensely flavoured, sweet blackcurrant varietal fruit, with hints of dark chocolate, superbly balance and elegant, refined tannins. Magnificently Bin 707. Unmistakable. "Dark and inviting, with a supple core of wild berry, mint and currant flavors that are rich and elegant, finishing with a long, smooth aftertaste!" -92/100 Wine Spectator.com

Tasted by sthenri on 9/20/2009 & rated 95 points: Had this 707 tonight and WOW!! Chocolate, cola, raspberry, figs, cherry and vanilla came together for one AWESOME wine.
Took about an hour in the decanter to start opening up. Love how this one is aging, I’d say with my limited knowledge at least another few years to finally show its best.
