De Toute Beauté: A remarkably supple blend of Gamay and several rare Jura grape varieties that Jean-Francois cannot include in his domaine wines due to their exclusion from the Côtes du Jura appellation. These varieties include Petit Béclan, Gros Béclan, Geusche, Argant, Peurion, Portuguese Blue, Isabelle, and Enfariné. Vinification: low temperature semi-carbonic maceration with indigenous yeasts, followed by one year of maturation in truncated conical vats – all without filtration or added sulphur. A fine, floral and highly mineral wine, with notes of raspberry, licorice and long pepper. The palate is fleshy, and as a whole it’s all about freshness.
La Croix des Batailles: Pinot from Alsace and jura, it is a cuvée sold through Ganevat’s négociant business, made with grapes sourced from vignerons who share Ganevat’s values and vision of natural viticulture. The grapes are harvested by hand, followed by semi-carbonic maceration with temperature control (12-14°C), and one year of maturation in barrels that have seen several wines. Bottled without fining, filtration, or the addition of sulphites. A nose of black cherry, violets and undergrowth, with vegetal and subtle smoky notes.
Victor de la Combe: A 100% Chardonnay cuvée, from old vines grown in the Mâcon region on slopes of limestone marls with very shallow soil. Vinification: after direct pressing, this non-oxidative cuvée (made using ouillage or ‘topping up’ of the barrels) was fermented with indigenous yeasts then matured on its lees in large barrels for more than two years in a humid cellar. No added sulphur, no fining, and no filtration.
