100% Nero d Avola
Organic vines, harvesting at night and using temperature controlled ferments to produce bright, refreshing wines. The vines are also between 150 and 300m above sea level, allowing for a more gradual ripening period than is usually possible in the boiling climes of Sicily.
Punchy and robust; lots of black cherry, plum and charred tobacco spice which, despite the baking heat, retains a neat line of acidity that brings a bright freshness with a fizz.
