ELABORATION:
The traditional grape varieties (Macabeu, Xarel·lo and Parellada) are harvested and vinified separately. Once the fermentation is finished, the wines of the different varieties are mixed. Second fermentation in the bottle at low temperature to have a slow fermentation. Aging to the optimal point of balance between freshness and creaminess, a minimum of 18 months of aging on its own lees
TASTING NOTE:
Color: Bright pale yellow, perfect integration of the fine bubbles, with a soft and delicate texture.
Nose: Fine and elegant, it is a fresh cava with toasted notes like coffee, accompanied by notes of vanilla. Fruity and rich in aromas such as peach, grapefruit and white flowers.
Mouth: Fresh, fruity, creamy and at the same time light with good body due to contact with the lees. Fine and very pleasant texture with notes of almonds and walnuts.

Lacrima Baccus is a recognition of the ancestors of Caves Lavernoya, who already in 1890 began the production and aging of wines and cavas. Today, they continue to produce quality wines, with ethical responsibility and applying ecology, always working as a team and improving day by day.
His estate has 20 hectares of its own vineyards where native varieties such as Macabeo, Xarel·lo, Parellada and Garnacha are grown, as well as international varieties such as Chardonnay, Pinot Noir, Merlot, and Cabernet Sauvignon. They work in two different appellations of origin: DO Cava and DO Penedés.
