The Merlot, Cabernet Sauvignon, and Cabernet Franc grapes of Jean Paul Deville's Cotes de Bordeaux Rouge grow on healthy, flourishing vines. The vineyard work respects the natural growth and development phases of the plants and raw materials, preserving the surrounding ecosystem to deliver unexpected aromas and flavours in the final product. Synthetic chemicals, pesticides, and herbicides are entirely banned in favour of a simple farming approach rooted in traditional practices. Harvesting is done manually, followed by a selection of the best bunches that will be brought to the cellar. In the cellar, there is an alcoholic fermentation and a 24-day maceration on the skins in steel. It then undergoes several months of ageing in wood.
2015 intense and impenetrable ruby red. The bouquet is reminiscent of ripe red berries combined with sweet spices like vanilla. On the palate, it reveals itself as soft, enveloping, and inviting, with a pleasant final persistence
