Description

The Cazes estate takes its historical roots in 1895. Michel Cazes will launch the first part of the vineyard by planting the first vines. His heirs will continue to believe in this wine project. This is why they are going to extend this future great Roussillon by buying hectares from their neighbors. Today, this property enjoys one of the largest wine farms in France: 220 hectares. Very quickly, the environment will be at the center. This is why the plants are grown according to the principles of biodynamics. Lunar calendar, disease management… The terroir is protected to produce the best grapes.

Le Credo is a wine made by Domaine Cazes, in collaboration with René Barbier. Winemaker from Catalonia, he is very famous for the quality of his wines in tasting. One of them was rated 99/100 by Robert Parker himself.
Vinification and aging of Le Credo 2019:
Numbered Bottles.

The terroir used to produce this red wine is clay-limestone accompanied by rolled and siliceous pebbles. This normally makes it possible to produce precise and elegant vintages.

It is in this search for quality that the grapes used to vinify the Credo are harvested manually in boxes. A single layer of berries. As soon as the latter arrive at the cellar, they are immediately refrigerated for 1 day at 5 degrees. Two sortings are carried out to separate clusters and grapes. Fermentation then takes place in 300 and 500 liter barrels. Few pigeages per day: only 2. The pressing following the maceration takes place with a natural press.
The new Credo vintage is then aged in concrete eggs for a portion. The rest goes into 300 liter oak barrels. It lasts a year and a half for this red wine. The filtration is then very very light.

Blend of Credo 2019: 40% Grenache, 30% Mourvèdre, 30% Syrah.

Tasting Cazes – Le Credo 2019: on the nose, aromas of black fruits, liquorice and leather. On the palate, the substance of this red wine is important. Toasted notes. It exudes a controlled power and an astonishing freshness, surely brought by the terroir. The finish is very long.
