Description

See previous notes on the 707.
The Henschke is possibly the star.
Cabernet from multi regions in SA and the Shiraz from one vineyard. The Mount Edelstone (ME) had a dry cork. Therefore had to decant, which now appears a wise decision. At 20 years old, the colour is red brown. Mahogany tinge at end. Moderate depth of colour.
ME has been opened for 90 minutes as I type. From initial nose of ribena ish to tastes dark chocolate. Do not believe what you read in the early books.
Softer tannins now; burnt caramel, slightly bitter chocolate taste disappearing.
My experience from drinking many fine Aussie wines is that the their shiraz taste more like their Cab over time.
36 degrees still in Burgundy ( for those of you who read my notes). Currently writing this in the cellar. 15 beats 36!
