Upon release, the 2000 Sassicaia was an unusually tannic and intensely mineral evocation of the wine, but more than of a decade of maturity has served to mellow the wine, privileging its ripe, juicy red and black fruits, its fine-grained and silky tannins, and its creamy mouth-feel. IWM believes the best way to enjoy Sassicaia is with some age; an evolved bottling of Sassicaia allows for tertiary development and showcases this legendary Super Tuscan's nuances of green pepper, spice, dark fruit, and is accompanied by aging notes of tobacco, cedar, and earth. Sassicaia, a legendary wine that's single-handedly responsible for launching the Super-Tuscan movement, may be the most coveted Bordeaux-style blend ever produced; the regard for this wine is so great that it was awarded its own DOC status by the same classification system that initially shunned it, a first for Italian wine.
