Pargues is a Chablis lieu-dit (place name/single vineyard) situated on a ridge between Montmains and Vosgros. It has the same exposure as the 1er crus of Les Vaillons and Montmains, so it's a very handy site. The story goes that this site was originally classified (pre-AOC) as a 1er cru level vineyard, before being largely abandoned during WWI (when there was a labour shortage). Regardless of this story, locals speak very highly of this site. The vines in Moreau's tiny parcel are 40-50 years old and generate considerably more perfume, flesh and intensity than the AC Chablis above. This cuvée, therefore, sees a measure of 30% old wood and is bottled separately as a Vieilles Vignes.
It's a sleek and stony wine with vibrant mouth-watering acidity to offset the flowing, silky textured fruit.
