Château Pavie is a winery in Saint-Émilion in the Bordeaux region of France. It lies on the plateau to the southeast of St. Emilion village. In 2012 it was classified in the first rank of the Classification of Saint-Émilion wine, as a Premier Grand Cru Classé (A), after having previously been a Premier Grand Cru Classé (B) since 1954.
The vineyard consist of 37ha in a single plot divided into more than 21 parcels planted to 60% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon.
Château Pavie produces elegant, harmonious and stylish wines that typically display a fine bouquet with good depth of fruit on the palate. Technical director is Laurent Lusseau and Bruno Lacoste is the consultant working under Gerard and Chantal Peres. The estate has dialled back the intensity of the wine in recent years with shorter maceration times, lower temperature vilification and a softer approach to oak ageing to deliver an even better balance to their wines.
Up to 20% of the annual production makes it into their second wine labelled Les Aromes de Pavie.
